We’re both from Louisiana and Trip’s ancestors actually migrated to Louisiana from France through Acadia (Canada, Nova Scotia) to Louisiana in the 1600s, so he is therefore legitimately, by definition, Acadian (Cajun). We grew up in North Louisiana, then lived in South Louisiana for 5 years while attending LSU (Geaux Tigers!) where we really became immersed in true Cajun cuisine from New Orleans through the Acadian country. We enjoyed cooking real, flavorful Cajun food and began to experiment with spices to improve upon the Cajun seasonings that were available. The result was Trip and Peggy’s Cajun Seasoning which we have been blending now for over 50 years!
